Sodium acetate is a food additive. It’s non-toxic, but I still wouldn’t be sticking it in my mouth.
The reason this works is because sodium acetate “freezes” at 130 degrees Fahrenheit. However, it is supercooled (meaning the particles remain a liquid although the surrounding temperature is much lower than the melting point). However, it is very unstable to touch, which causes a few molecules to crystallize, starting a chain reaction that causes the temperature to jump back to 130 to freeze it.
